THE WINERY

When we opened The Winery in central Queenstown in May 2005 we were one of the world's first and largest wine tasting experiences. With a focus on bringing the best of New Zealand wine to one location, The Winery's reputation grew and in 2019 we were recognised by TripAdvisor in the World's Top 10 wine experiences People's Choice Awards.

In February 2020 The Winery opened a second store in Arrowtown, taking the experience to the next level with more whisky and gin tastings, our famous cheeseboards with a new tapas menu and a decor designed for the relaxation and comfort of our customers. This is our top selling Pinot Gris and it always sells out!  The Prophet's Rock Pinot Gris 2025 is a Central Otago Pinot Gris from vineyards in Bendigo and Pisa, whole-bunch pressed and fermented with wild yeast in old barrels. This wine has ripe pear, white peach and a little spice, with a textured finish and fresh acidity. It suits anyone who likes Pinot Gris with some weight.

The first thing in the glass is ripe pear, in the Poire William style, with white peach and white rose petals behind it. Cardamom and preserved lemon sit underneath.

Prophet's Rock made 36 barrels of the 2025. It has more texture than most Pinot Gris and it's a good wine to open with dinner.

What sets it apart is how it's made. The fruit is pressed as whole bunches over 5–6 hours and fermented in old barrels with wild yeast (the yeast that lives naturally on the grapes). The wine then stays on its gross lees, the spent yeast cells that add body, until bottling. Old barrels add texture rather than obvious oak flavour.

What it tastes like

This wine has a richly perfumed nose and a shining white-gold colour. The aromas on the nose are ripe pear, white peach and white rose, with cardamom and preserved lemon (lemon cured in salt, which gives a savoury, floral citrus note) underneath.

On the palate there's pear and white stone fruit, guava and spice. The finish is long and textured, with fresh acidity keeping it lively. There's 11 g/L of residual sugar (natural grape sugar left after fermentation), which adds a richness and texture that is just delicious.

Style at a glance

  • Body: medium, with a textured feel from the lees
  • Sweetness: between dry and off-dry, with 11 g/L of residual sugar
  • Acidity: fresh
  • Oak: old barrels, so texture rather than oak flavour
  • Style: textured, perfumed, stone fruit, spicy, fresh

Food to enjoy this with

Best enjoyed with good food. Roast pork belly with apple, chicken in a tarragon cream sauce, seared scallops, a mild Thai green curry and a creamy risotto all suit the texture and pear fruit. One unexpected match is chicken liver pâté on toast, because the wine's texture and fresh acidity cope well with the richness.

Who makes it

Prophet's Rock is in Bendigo, Central Otago. Paul Pujol is the winemaker.

The fruit for this wine comes from three vineyards: Rocky Point in Bendigo (47%), Kopuwai in Pisa (49%) and the Home Vineyard in Bendigo (4%). Rocky Point has warm, free-draining schist soils and steep plantings. The fruit was handpicked from 27 March to 5 April 2025, with yields capped at 38 hl/ha (5 t/ha).

About the vintage

Writer Joelle Thomson called 2025 in Central Otago "a very good year" in her vintage overview. An early November frost during flowering damaged some shoots, but good weather through flowering that followed gave strong fruit set.

The season was dry, with temperatures close to the long-term average. Yields were similar to 2023 and 2024, only slightly reduced by the frost. Cool nights and warm days at harvest helped the grapes hold their acidity.

When to drink it

This is fantastic drinking now.  This is the sort of wine that you buy a case of, as Prophet's Rock recommends cellaring this for 10+ years.
